Our Chardonnay grapes were pressed immediately upon arrival at the winery. The juice was allowed to settle for a few days before inoculation with a varietal specific yeast strain. The must was fermented at a cool 53°F for two months and allowed to sit on the yeast lees for another few weeks. Without the influence of oak or ML, this wine shows crisp minerality and clean varietal fruit characteristics. This crisp and refreshing Chardonnay is filled with aromas and flavors of green apple, Asian pear, grapefruit and citrus making it a perfect aperitif on a warm summer day.
My Tasting Notes:
Crisp apples with some pineapples and lots of lush fruits. A hint of acidity that calms quickly and then it comes right back at you.. You get Granny Smith apples and pineapples. It does have a creaminess about it.. This is one of my favorite.
