Our family’s first Napa Valley Cabernet Sauvignon is 94% Napa Valley Cabernet and 6% Napa Valley Petite Verdot. It was hand harvested at our Silverado Trail vineyard on October 21 and 26, 2011 and aged for 18 months in new French and two year old neutral oak barrels.
A few minutes in the glass will reveal rich layers of cedar, spice, cherry and raspberry with delicate vanilla bean and toasty oak on the finish. A decade or more of bottle aging will add to the richness and complexity of this release.
My Tasting Notes:
I really enjoyed this Cab. It was slightly spicy on the nose with lots of big juicy fruits. You could actually taste the vanilla.. The finish was nice and long with a little toasty ending.
I paired it with the Cheese tray we had and as well as the spicy chicken street tacos.
